This recipe for this perfect green chia pudding has become my favorite quick breakfast and I can honestly say it evolved right in my kitchen. Imagine combining the flavor of healthy banana ice cream, vanilla, the sweet flavor of breakfast cereal, and a hint of caramel with none of the guilt. That’s what this tastes like. It’s amazing! It’s sweet and creamy but with great texture and crunch. Yes, you get the benefits of spinach but you (or the kids) will never taste it. Plus, it packed with protein and you will definitely be full until lunch.
Once you make it, you will think of a dozen ways to modify the basic recipe. It’s sweet and delicious without adding any additional sweetener.
Best Crunchy Green Chia Breakfast Pudding
- 3/4 cup of almond milk
- 2 – 3 cups of spinach
- 1 Medjool date
- 2 tablespoons of chia seeds
- 2 tablespoons of hemp hearts
- 1/2 teaspoon vanilla extract (more if you love it)
- 1 sliced banana
- 1 large handful of slivered almonds (or other nuts crushed but almonds rock!)
Combine the almond milk, spinach and date in your blender (I use a Vitamix but most any blender should work for this recipe) and blend until smooth. Pour the mixture into a cup or bowl. Add the chia seeds and vanilla. Stir until well blended. Add remaining ingredients and stir. Let set for 15 to 20 minutes. The chia seeds absorb the liquid and become a pudding type consistency. The nuts and banana give it texture.
