I think I’ll have this for lunch today. Yep, it’s 9:00 a.m. and I’m already thinking about lunch! I love this recipe. It’s so nutritious. What I love about this recipe is that it’s forgiving. No measurements. Just put it in.
Put 1 -3 tsp. of organic coconut oil in a pan and heat. Sauté fresh broccoli, mushrooms, and red onion, sprinkled with garlic until you get some caramelization (is that a word?). It’s okay to let them brown a bit; even the broccoli. It gives it a super rich taste. Then throw in a tomato at the end and sauté until warm. Serve it topped with nutritional yeast and hemp hearts. Add pink salt and cracked pepper to taste. So good! It tastes similar to a soy-like stir-fry.
