I’m not a scientist and I don’t play one on the internet, however I have done extensive (and I do mean extensive) research on holistic diet and nutrition. That being said, nutrient absorption is an important factor in what I eat and how I eat my food.
Nuts have a natural enzyme inhibitors called phytates (phytic acid), polyphenols (tannins), and goitrogens. These inhibitors make nuts more difficult for our bodies to digest, thus making the nutrients less usable by our bodies. By soaking raw nuts, these inhibitors break down in the water and can be washed away, leaving a more digestible and nutrient available nut.
Soaking raw nuts is super easy, it does not change the taste of the nut and takes only a small amount of forethought. You simply cover the nuts in water and allow them to sit from 30 minutes to several hours.
I like to keep nuts soaking in my refrigerator. As long as you rinse the nuts every couple of days and store them in clean water, the nuts can stay in your refrigerator for a week or longer. I have had them in my refrigerator for 2 weeks and they were great! They are ready to use immediately in nut butters, as a snack, or incorporated in your favorite recipe. If you prefer, they can be dehydrated or roasted.
